Uncured Milano Italian Salame is inspired by the traditional salame varietal made in Milan, in
Northern Italy, in which fine grind and mild flavor are typical. It has a gentle mild taste with a touch of pepper and garlic. It has a find grind and smooth texture.
Uncured Calabrese Salame derives from the salame tradition of Southern Italy, specifically Calabria, where a spicier flavor and coarser grind is used. It has a full body spicy flavor given by a combination of chili pepper and sweet paprika and a medium grind texture.
Uncured Fennel Salame pays homage to the Central Tuscany salame tradition. It has an aromatic and fragrant taste given by the right blend of salt and fennel seeds with a coarse grind.
